
My favorite pasta! :)
- Cook whole wheat pasta until tender.
- While that is cooking, pour a tblspn or two of olive oil into a pan. Let that heat up on medium heat, then add spinach and halved grape tomatoes. I also add a little jarred marinara (Bertoli) to add some more moisture.
- Once pasta is done, drain it, put into dish, then add the spinach and tomatoes on top! Sprinkle on some parmesan, and you have a light & healthy, but filling, meal. YUM :)

Must try sometime!

INGREDIENTS
• 4—5 Large Ripe Avocados
• 1 Medium White Onion, diced
• 2 Limes
• 1 large Tomato, diced
• ¾ cup Coriander, finely chopped
• Salt and Pepper
• Pizza Dough (Udi’s gluten free dough)
• Olive Oil
• Basil Leaves
• ¼ Cup Coriander, finely chopped
• Cumin Seeds
• Oregano
• 1—1 ½ Cups Cheese, grated (daiya)
To make the guacamole, slice avocados in half and discard pits.
Scoop out of shell with a spoon and place in a bowl. Squeeze in
juice of one lime immediately to prevent browning. Mash avocados
to desired consistency. Add chopped ingredients; onions, cilantro,
and tomato. Squeeze in juice of second lime and sprinkle with salt
and pepper (to taste). Stir gently to blend ingredients.
Cover rolled pizza dough with light layer of Olive Oil. Place basil
leaves on top of oil, as many as desired. Sprinkle coriander, cumin
seeds, and oregano on top. Cover with cheese. Cook at 425OF for 8-
-12 minutes, or until crust is browned and cheese is completely
melted. Cover the pizza with the prepared guacamole and serve. If
desired, place on top salsa

personal vegan pizza
remarkably similar to the last pizza i posted… just a few different ingredients, round, a little fatter, and eaten all in one go ;)
ingredients
1/2 cup garbanzo bean flour (again, feel free to sub whole wheat!)
1/2 cup water
1/4 cup salsa
1 tbsp nutritional yeast
1 tsp baking powder
vegetables! i used broccoli, yellow pepper, onion, spinach, and fresh mint!
directions:
mix’er up! i baked at 350 for 20 minutes… but again, probably could have gone for longer, since i forgot that i did it at 410 last time! :) whoops. allow to cool for 5-10 minutes before cutting.
makes: one personal pizza, ~325 calories. nom.

guilt free, cruelty free pizza
i love love love pizza. but sometimes, i’d like it without all the guilt, and definitely without the cruelty!
ingredients:
1/2 cup garbanzo and fava flour (feel free to use whole wheat! i wanted to try this out)
1/2 cup water
2 tbsp unsweetened applesauce
2 tbsp organic tomato paste
2 tsp nutritional yeast
1 tsp baking powder
salt, oregano and some bazil
your favourite pizza toppings! i used spinach, olives, red pepper, and onions
directions:
mix everything! :) bake at 410 for 15-20 minutes (i did 15, but would have left it for another 5). allow to cool for 10 minutes before cutting into it, and enjoy!
makes: 2 servings (8 of the pieces shown above!) ~175 calories per serving
